Hey Zucchini, Don't You Be a Meanie

It happens every autumn in Wisconsin. They warn you not to leave your car windows down or your doors unlocked, lest you return to your vehicle to find it full of zucchini. It would be a shame to let such a versatile, delicious, plentiful food resource go to waste, but what to DO with it? Fortunately, there are plenty of ways to prepare zucchini so it never gets boring. See below for some of the library staff's favorite zucchini recipes. 

Breakfast: Zucchini Hash

One of Hannah's all-time go-to zucchini recipes. Just make sure you drain the grated zucchini well! Click for full recipe.

Lunch: Meal Prep Zucchini Burrito Bowls

Delicious and nutritious, and easy to make ahead of time! Take it to work or send it to school with the kids. Plus, just one pot! Sub pressed tofu for a high-protein vegetarian take. Here's the recipe!

Appetizer: Zucchini Bruschetta

We have a couple gluten-free folks on staff, and this recipe goes over well no matter who's coming over to watch the Packer game. Bruschetta is always a little messy, so don't forget napkins! Full recipe here.
